Everything we do lives between the stars above and the earth below. The sky we will never reach and the ground we stand on every day. Coffee is is deeply dependent these two working in harmony.
Every choice- from the green coffee we buy, to the vinyl playing in the shop- is made on purpose. We share a stubborn belief that hospitality is worth doing right.
For the land, the farmers, the people who came before us, and the person we hand a cup to across the bar. Respect runs both directions.
We roast every bag in-house, because the only way to be sure of what ends up in your cup is to be there for it.
Roasting is the romance of coffee. It is heat and time and paying close attention. A few seconds too long and a coffee turns on you. We would rather own that risk than hand it to someone else. Control is not about being fussy. It is about caring enough to do the hard part yourself.
This land held people long before it held us, and they understood something we are still learning: you do not own ground, you answer to it. The land out here asks for respect and rewards the people who give it. We try to run the shop the way our families ran things before us. Take care of your neighbors. Take care of the ground. Leave it better than you found it.
Our name comes from Howard Bruno Smith- A cowboy and rancher from Tokio, ND.
